In a large stockpot, combine the vegetable broth, candied ginger, dried cherries, dried pears, dried apples, brown sugar, kosher salt, peppercorns, allspice berries, 3 cinnamon sticks, and 5 sage leaves. Stir until the sugar and salt dissolve completely. Bring to a boil, then reduce heat to medium-low and simmer for 1 hour, stirring occasionally. (1 hour)

Remove the brine from heat and add the ice water, stirring to chill the brine. Refrigerate until completely cold, at least 2 hours. (2 hours +)

Place the still-frozen turkey into the cold brine and refrigerate for 3 days, ensuring the turkey is fully submerged. Turn the turkey over in the brine on the second day. (72 hours)

On serving day (the third day of brining), preheat oven to 350 degrees F (175 degrees C).

Remove the turkey from the brine and place it in a roasting pan. Discard the brine.

In a 5-cup microwave-safe measuring cup, combine the quartered onion and apple, rosemary sprig, 2 cinnamon sticks, and 1 sage leaf. Add enough water to cover the ingredients. Microwave on high power until hot, about 5 minutes. (5 minutes)

Pour the contents of the cup into the cavity of the turkey. Rub the skin of the turkey with vegetable oil.

Roast in the preheated oven until the turkey is golden brown and the juices run clear, 4 to 4 1/2 hours. An instant-read meat thermometer inserted into the thickest part of a thigh should read 165 degrees F (75 degrees C). (4-4.5 hours)

For a deeper flavor, toast the peppercorns and allspice berries lightly before adding them to the brine.
Make sure the turkey is completely submerged in the brine for even flavor infusion.
Adjust the amount of rosemary and sage to your personal preference.
If your roasting pan is too small, use a brining bag inside a cooler filled with ice to keep the turkey cold during the brining process.
