Follow The Directions

01

Step
2 mins

Combine all ingredients (melon, cucumber, onion, avocado, jalapeño, garlic, vinegar, lime juice, salt, and pepper) in a high-speed blender. (2 minutes)

02

Step
3 mins

Blend on high speed until completely smooth and creamy. You may need to scrape down the sides of the blender a few times to ensure even blending. (3-5 minutes)

03

Step
1 mins

Taste and adjust seasonings as needed. Add more lime juice for brightness, jalapeño for heat, or salt and pepper to taste. (1 minute)

04

Step
2 hrs

Transfer the gazpacho to an airtight container and chill in the refrigerator for at least 2 hours to allow the flavors to meld. (2 hours minimum)

05

Step
2 mins

Before serving, give the gazpacho a quick stir. Garnish with fresh mint sprigs and a drizzle of high-quality olive oil, if desired. (2 minutes)

For a creamier texture, add a tablespoon of Greek yogurt or crème fraîche before blending.
If you don't have white balsamic vinegar, you can substitute with regular balsamic vinegar, but use slightly less as it's more acidic.
The jalapeño pepper's heat can vary greatly. Start with a small amount and add more to taste. Remove the seeds and membranes for less heat.
This gazpacho is best served very cold. Consider chilling your serving bowls or glasses before serving.
