Roasting the green chiles yourself adds a wonderful smoky depth to the stew. If using canned, be sure to drain them well.
Adjust the amount of green chiles to your preferred level of spiciness. Start with less and add more as needed.
This stew is even better the next day, as the flavors have had time to meld together. It also freezes well for up to 3 months.
