For an even deeper flavor, consider brining the turkey for 12-24 hours before roasting. This will help to keep the turkey moist and tender. If you don't have a roasting bag, you can roast the turkey uncovered in the roasting pan, but be sure to baste it with pan juices every 30 minutes to prevent it from drying out. Adjust the amount of chipotle peppers to your preferred spice level. For a milder flavor, use only half of the can. Don't discard the pan drippings after roasting! They make a fantastic base for gravy.
