In a skillet, cook the bacon over medium-high heat, turning occasionally, until most of the fat has rendered and the bacon is tender-crisp (5-7 minutes). Drain the bacon on paper towels, reserving the rendered bacon fat in the skillet.

Brush the bottom of a 10x15-inch baking pan with half of the reserved bacon fat and olive oil mixture. Season the potato chunks generously with salt and pepper, then arrange them in a single layer in the prepared baking pan.

Roast in the preheated oven until the potatoes are golden brown on the bottom (about 30 minutes). Remove from the oven and reduce the oven temperature to 375°F (190°C).

Turn the potatoes over in the baking pan. Sprinkle with the cooked bacon pieces, grated Parmigiano-Reggiano cheese, and chopped garlic. Drizzle the remaining bacon fat evenly over the potatoes.

Return to the oven and continue roasting until the Parmigiano-Reggiano cheese is melted and bubbly (about 15 minutes). Sprinkle generously with fresh parsley before serving.

For extra crispy potatoes, ensure they are well-drained and slightly cooled before peeling and cutting.
Don't overcrowd the baking pan; roast in batches if necessary to ensure even browning.
Feel free to experiment with different cheeses, such as Pecorino Romano or Asiago.
Add a pinch of red pepper flakes for a touch of heat.
